Easy Meal Planning: Breakfast Ideas

Breakfast is usually the first meal of the day for many people. In my household I'm the only one that truly likes breakfast food. Where did I go wrong? This leaves me with trying to find non-breakfast items for the kids to eat in the morning.


Our bodies are introduced to a meal after a long period of fasting. The body metabolizes food during breakfast more than food that is consumed later in the day.

Therefore, it is especially important that you start the day on the right track with a well-balanced meal. Feel free to get creative with your ideas, and listen to your body above all else. A craving may be a sign that your body desires a certain vitamin.


Here are a few ideas for breakfast:



Fruit Dishes


Fruits can in many different shapes, colors, and sizes. There are many dishes that combine fruits in a creative fashion.

A fruit salad with a sprinkle of nuts can be a light and energizing breakfast. Fruits are loaded with antioxidants and other minerals that are essential to the body’s function.


Many fruits like bananas and kiwis are an abundant source of potassium and fiber. Consumption of fruit can increase athletic performance, improve cognitive abilities, and promote weight loss.


Fruits can be incorporated with other food items as well. A fruit smoothie is another way to get a large variety of fruits into a single beverage. Other ideas include fruit-based pancakes and fruit oatmeal.


Why fruit for breakfast? It is easy to prep and prepare ahead of time, isn’t expensive if you shop smartly, and loaded with a lot of vitamins and minerals. The recipe below can easily be bagged up at night, frozen and then just add the wet ingredients to the blender in the morning.

Oatmeal and Overnight Oats


Another great option for breakfast that is not only healthy, but easy to make ahead of time, is with oatmeal. Especially if you’re trying to make overnight oats, which are oats you soak in milk or a dairy-free liquid at night with any ingredients you want.


This is something you can do ahead of time in mason jars and store in the fridge for several days without spoiling. It doesn’t get simpler than that!


For example, a simple and tasty overnight oats includes oats with almond or regular milk, peanut butter, and banana slices.

Egg Dishes


The great thing about eggs is that they are loaded with protein, a good option for people who don’t eat meat or just don’t like it, and who prefer more savory dishes in the morning. There are quite a few ways to make eggs ahead of time when prepping your meals, including:


Quiche and Casserole – These are both good options for cooking eggs in the oven, along with any ingredients you want, including veggies, cheese, hashbrowns, and breakfast meats.


Slow cooker casserole – Another option if you don’t want to use your oven is to make the casserole right in your slow cooker. This can be done on the weekend before your week starts, or even early in the morning on Monday while getting ready for work.
